Hi ,
we are excited to share the beginning of Lent with you. As we journey, the theme we are pulling out of the readings is Full to the Brim. We discover God's continuing faithfulness to us, and how because of God's provision and love, we are full to the brim.

Journeying with you, Dion

Shrove Tuesday/Pancake day

I thought I would share my super special recipe for amazing pancakes. This is the recipe that I have used the last few years as part of our "Pancakes to Ashes" service.

This recipe services 2 people and is easily doubled, trebled or quadrupled depending on the size of your household or the appetites within! If you have extra batter you could cook smaller piklet sized ones for snacks.

1 egg, separated
1 cup of milk
1/6 cup white/castor sugar (just use half a 1/3 measure, if you are doubling the recipe you'd use 1/3)
1 tsp vanilla essence
1 cup plain flour
2 tsp baking powder
1/4 tsp salt
butter or oil for frying.

Beat egg yolks, milk, sugar and vanilla together, add flour, baking powder and salt and beat until smooth. Stand for 15 minutes or longer in the fridge. Just before you want to use the mixture, beat the egg whites to soft peaks and fold in. Cook in a pan over a medium heat using butter/oil. Keep warm in a low oven. Serve with maple syrup, cream, jam, chocolate syrup, lemon and sugar, whatever your family traditions dictate!
